DESCRIPTION: Canterbury Cheesemongers is run by Martin and
Sarah Aspinwall, who describe a Cheesemonger as someone who buys and
sells cheese. The couple worked for eight years in a business that specialises
in the art of affinage (cheese maturing) and cheese selling, Neal's Yard
Dairy in London, before staring their own part-time venture, operating
out of an insulated shipping container in their backyard. A shop was
opened in 2002, allowing space to mature a wider range of cheeses, and
to make, bake and sell a range of complementary preserves, breads and
traditional English pastries. Canterbury Cheesemongers won Champion Cheese
Retailer at the 2004 New Zealand Champions of Cheese Awards, and one
of the 2004 Cuisine & Matua Valley Awards of Innovation and Excellence.
Canterbury
Cheesemongers buys cheeses directly from cheesemakers here and
overseas, some made specially for them. To ripen them to peak
maturity, cheeses are stored and aged in customised rooms, and
may have their rinds washed with special bacteria, salty water,
wine, or olive oil and peppercorns. Softer cheeses may be wrapped
in walnut leaves, and cloth-rinded cheddars are coated in lard.
There is a Wholesale side to
the business, supplying retailers and restaurants. Canterbury Cheesemongers is
the New Zealand distributor for a range of high quality English territorial cheeses.
