DESCRIPTION: Al Dente is an Auckland-based food consultancy which provides cooking classes, Italian Chef at Home, team building and import/export services, the 'New Zealand home of Italian food & culture'. It is run by Raffaela Delmonte and husband Paolo, an Italian couple who migrated to New Zealand in 1997, and who also co-ordinate the Auckland branch (Convivium) of the international Slow Food movement. Raffaela is a a member of the New Zealand panel for Extra Virgin Olive Oil screening, and an active teacher, writer, speaker and chef. Her first book The Fragrance of Basil won the 2002 Gourmand World Cookbook Award as best food literature book, English language. She returns every year to Italy, in search of Italian culinary history and traditions and to discover and document the food and wine link.

DESCRIPTION: Dean Brettschneider is a professional baker and patissier of international standing, and author of five award-winning books on baking. Dean is also a regular columnist in baking industry publications, and manages technical support for the world's largest supplier of baking ingredients, BakeMark International, based out of Shanghai, China. Dean has a craft bakery background as well as strong industry credentials (including stints in technical roles at Ernest Adams and Goodman Fielder). He has also taught, judged at the New Zealand Baker of the Year awards, and moderated bakery Trade Certificate examinations in New Zealand. Dean’s latest book, launched in October '08, is The Menu, co-authored with chef David Laris.
The Dean Brettschneider site features both recipes and baking tips, categorised under Breads, Cakes & Cookies, and Pastries, Pies & Tarts. As a Kiwi working in Asia, but with international experience and responsibilities, Dean has an interesting perspective on the baking industry and its issues, and his Diary section allows him to provide regular comment on these, along with updates and industry events.
