Apr 06: Al Dente is an Auckland-based food consultancy which provides
cooking classes, Italian Chef at Home, team building and import/export
services, the
'New Zealand
home of Italian food & culture'. It is run by Raffaela Delmonte and
husband Paolo, an Italian couple who migrated to New Zealand
in 1997, and who also co-ordinate the Auckland branch (Convivium) of the international
Slow Food movement. Raffaela is a a member of the New Zealand panel for Extra
Virgin Olive Oil screening, and an active teacher, writer, speaker and chef.
Her first book The Fragrance of Basil won the 2002 Gourmand World Cookbook
Award as best food literature book, English language. She returns every year
to Italy, in search of Italian culinary history and traditions and to discover
and document the food and wine link.
The
Al Dente website contains details of the company's network of food experts and
related services, recipes, a directory of Italian imports, links to Italian producers
and producer organisations, plus Al Dente and Slow Food news and events. You
can order New Zealand-produced Bresaola, a traditional Italian cold
cut, air-cured beef, or your own autographed copy
of The Fragrance of Basil. Raffaela's Italian Chef at Home service in
particular comes highly recommended!

DESCRIPTION: Dean Brettschneider is a professional baker and
patissier of international standing, and author of five award-winning books on
baking. Dean is also a regular columnist in baking industry publications, and
manages technical support for the world's largest supplier of baking ingredients,
BakeMark International, based out of Shanghai, China. Dean has a craft bakery
background as well as strong industry credentials (including stints in technical
roles at Ernest Adams and Goodman Fielder). He has also taught, judged at the
New Zealand Baker of the Year awards, and moderated bakery Trade Certificate
examinations in New Zealand. Dean’s latest book, launched in October '08,
is The Menu, co-authored with chef David Laris.
The Dean Brettschneider site features both recipes and baking tips, categorised
under Breads, Cakes & Cookies, and Pastries, Pies & Tarts. As a Kiwi
working in Asia, but with international experience and responsibilities, Dean
has an interesting perspective on the baking industry and its issues, and his
Diary section allows him to provide regular comment on these, along with updates
and industry events. A Links page includes many useful baking sites and resources,
and a Books section covers descriptions, reviews and awards. Mouthwatering photographs
from this book (by Kiwi photographer Aaron McLean) are used throughout the site – bread

is a recently re-launched promotional vehicle for Vegfed (the NZ Vegetable
and Potato Growers’ Federation Inc.), representing all 3000 of
New Zealand's commercial vegetable growers. Vegfed's objectives are to
promote, encourage and enhance the profitable production, distribution
and consumption of New Zealand grown vegetables. Vegfed, the Fruitgrowers
Federation and the Berry Growers Federation are all merging into a new
body called Horticulture New Zealand, to be officially launched in November,
which by neat coincidence is National Fruit and Vegetable Month.
Vegetables.co.nz
is targeted at an adult audience, with recipes, cooking tips,
nutritional information, industry news and data, and various
printed resources. Can't bear being away from your broccoli?
- you can even get vegetable screensavers and wallpapers
for your computer. Design is clear and colourful, with a
database of recipes that can be searched by course and by
vegetable. Its sister site, 5+ A Day, aimed at kids, is equally
as colourful. 5+ A Day has adopted the "5 A Day The
Color Way" campaign launched by the Produce for Better
Health Foundation in the United States. Many of the phytochemicals
and other compounds that make fruit and vegetables such healthy
foods and can help reduce the risk of diseases like cancer,
heart disease and obesity, also give them their colour. So
to ensure we get a wide range of them we need to try and
eat fruit and vegetables from each of the colour groups every
day.
